I made these to bring to my friend's New Year's Eve party. They're pretty much traditional 'Rocky Road' cupcakes but since there was so much snow on the roads I decided to call them 'Snowy Road' cupcakes on the tricky ride over to her house.
We enjoyed these after dinner while playing DJ Hero until the New Year arrived.
Snowy Road Cupcakes
Cupcakes
1 | package chocolate cake mix |
Water, vegetable oil and eggs called for on cake mix box |
1/4 | cup mini chocolate chips |
Frosting
1 | can chocolate frosting |
1 | cup mini marshmallows |
2/3 | cup walnut pieces |
1/2 | cup mini chocolate chips |
hot fudge topping or chocolate syrup |
Step 1
Heat oven to 350°F for shiny metal or glass pan (or 325°F for dark or nonstick pan). Line 2 cupcake trays with paper or foil liners.
Step 2
In large bowl, beat cake mix, 1/4 cup chocolate chips, water, oil and eggs. with an electric mixer at low speed for 30 seconds. Scrape bowl down and continue mixing at medium speed for 2 minutes.
Step 3
Fill cupcake liners 2/3 with prepared mix. Bake cupcakes as directed on box for 24 cupcakes. Cool 10 minutes. Remove cupcakes from pan; cool completely.
Step 4
Once cooled, spread on a thin layer of chocolate frosting. Top with marshmallows, walnuts and remaining chocolate chips, pressing down to make sure toppings stick. Drizzle chocolate over top.
(I left the walnuts off some by special request)
